Tabbouleh
Serve tabbouleh with whole wheat pita bread and hummus for a nutritious afternoon snack.
What you’ll need
Measuring spoons
Large bowl
Small bowl
Spoon
Ingredients, Serves 4
3 cups Fresh parsley, chopped
1 cup Fresh mint, chopped
1 Head of lettuce
2 Persian cucumbers, sliced
2 Tomatoes, chopped
½ Bunch green onions, chopped
½ cup Bulgur wheat, uncooked
For the dressing:
1 tbs Olive oil
Lemon juice, to taste
Cumin, to taste
Salt and black pepper, to taste
Directions
Pour hot water over bulgur wheat and allow to stand until water is absorbed, about 30 minutes.
Combine the rest of the ingredients in a large bowl and mix well. Serve immediately.
